The Wobbly Cake Co. has once again ignored all reasonable guidance and produced a birthday spread consisting of: • a dangerously soft light chocolate sponge cake stacked with freshly whipped cream thick enough to require planning permission, and • scones so buttery they’ve caused at least three people to whisper “I’ll just have half” before immediately eating four. Plain scones. Fruit scones. Giant clouds of cream. Powdered sugar drifting through the atmosphere like bakery fog. Absolute scenes. This week at the NEC in Birmingham, our Gluten-free Lemon, Passionfruit and Mango Sponge quietly sat on a judging table, behaved itself admirably, and then came home wearing Gold. Not silver. Not bronze. Gold. Three layers of gluten-free sponge, bright lemon, tropical mango, sharp passionfruit, fresh cream, and just enough confidence to hold its own in a national competition — and somehow it worked. For a small business built around baking things by hand, slightly imperfectly, and always with flavour first, this feels enormous. Thank you to everyone who buys slices, orders cakes, visits markets, supports small business, and trusts us with celebrations. The Wobbly Cake Co. is proud to announce that it has been awarded a Gold Medal at Britain’s Best Cake 2026, held this week at the NEC Birmingham as part of one of the UK baking industry’s leading national competitions.

The Gold-winning entry was a gluten-free lemon, passionfruit, and mango Sponge — a three-layer gluten-free sponge combining bright lemon, tropical mango and passionfruit, layered with fresh cream and finished with a passionfruit glaze. Judged by industry specialists, the cake was recognised for its flavour, balance, texture and overall craftsmanship.

Organised by British Baker, Britain’s Best Cake is a national competition designed to celebrate excellence in professional cake-making across the UK. Medal winners are recognised as producing cakes of exceptional standard, with organisers highlighting the award as a mark of talent, technical skill and dedication that places successful bakeries among the strongest in the industry.
